It is the ideal yeast when a fast fermentation is desired and it is known for its complex and well-rounded character. This ale yeast has the ability to settle quickly to create a compact sediment layer resulting in a brilliantly clear beer. S-04/WY1098 was my go to English strain before trying alternative English yeast strains. If fermented cold (62-66 F) it produces a pretty clean beer with a little bit of fruity esters, however if you ferment warmer (67-72 F; especially with bigger beers) it tends to produce a slightly tangy, doughy flavor.
